This was supper tonight. beef steak, red potatoes, green and red bell peppers, and onions, all marinaded in fat free italian dressing. Turned out great as usual. This is the type of meal that we have more than anything. To keep the dairy, sodium, citrus, and carbs low. Obviously the potatoes are carbs, but I add more veggies than potatoes. You can use any kind of meat, just make sure its a lean meat, and any kind of veggies. Also, you can substitute potatoes for brown rice. If you use the potatoes, just throw it all into one casserole dish and cook it according to the meat. Italian is my favorite, but you can also use any number of marinades.
