Quiche!

This is an old favorite of mine that I tweaked a bit. My mommy use to make this every Sunday morning. This is a DOUBLE recipe.

2 frozen pie crusts (deep dish is best)
1 c. cooked and crumbled turkey sausage
2 c. mixed veggies of your choice, diced
a small amount of cheese is optional
1 dozen eggs, scrambled

Mix everything together. Fill pie crusts a little over half way. DO NOT fill to the top, it will over run when cooking. Set both on cooking tray and place in a preheated 350 oven. Bake for at least 30 minutes. If not done, bake in 10 minute intervals until egg is cooked and crust is brown. Let cool for 5 minutes.
If you want to make it a day early, you can bake it half way, refrigerate, and then finish baking in the morning to save time. Remember this is egg so leftovers must be put in the fridge. ENJOY!

Back in Action!

Well it has been almost an entire week since I have gone to the gym. Today is Thursday and I didn't go last Friday or Saturday because of the heat. It reached 114, feeling like 123, and I didn't feel that I should risk it with my health. I took David to work that day and got sick just from driving! Then we were out of town with family Sunday and Monday. Then I was so exhausted Tuesday I kind of just chilled. Wednesday was a bad day. I just could not get around to do anything! I packed my gym bag last night so I had no excuse this morning. Boy was it tough to get up and go this morning, but I did! So hopefully this will put me back on track.
I really wasn't quite "off track". I stay on track with my eating, AND I was VERY active the whole time. So even though I was not at the gym, I was doing what I needed to do.
I am glad that I have figured out that you can go out of town, have a great time, and still live healthy. I feel like I can do so much more this way! How exciting!!!

Knoebel's Grove!!!



WOW! I had such a great time! It was a bit humid in the first part of the day, but then it rained at lunch time and supper time and completely cooled everything off. I got a little pink on my shoulders, but nothing too bad. And the rain chased everyone away, so there were no long lines! Since the rain happened at meal times, it didn't keep us from doing anything...it really was a perfect day to go!
Last year I had to use a scooter and I went on 2 rides. I could not fit on anything else, and if I COULD fit, I couldn't get on and off without hurting myself so I didn't go. THIS year, I brought my cane, but it stayed in the van the WHOLE time! Didn't even THINK about getting it out! And I brought my handicapped card, which will let me go to the front, and I didn't use it, I waited in line like a normal person! AND I went on at least 7 different rides, SEVERAL times! I did sooo much more than I have ever been able to do. I am really feeling everything I did yesterday, today, but I am so proud of myself and it only makes me want to work harder. I REALLY want to go on the roller coasters next year so we will see! I had too many NSVs to count them all! I think yesterday was one big NSV!

Oh, and the shirt and capris I am wearing are a 4x! One size down!!!!!

Cinny's Italian Pork Foil Pack


This is very simple and very delish!

4 lean boneless pork chops (marinated a few hours in fat free italian dressing)
8 Tbs. fat free italian dressing
4 cups of your favorite veggies

Preheat oven to 425...tear off 4 (8x12) sheets of foil. Lay one pork chop on each piece of foil. Top with one cup of veggies and drizzle with 2 Tbs. dressing. Fold foil into 4 packs and put onto a baking sheet. Bake for 35 minutes or depending on size of chops, until cooked. Serve by itself or with 1/2 cup brown rice. Enjoy! Calories 298 protein 30mg

In the next coming week I will be trying at least 5 new recipes, a couple of them using foil packs, but all nice and healthy.

Cravings and Websites

This past week I ended up having a HORRIBLE craving. But instead of telling you about it, I will give you a link. A newly acquired friend of mine has an excellent website, www.antigurufitness.com. He helped me through the craving by not just encouraging me, but making a deal to write about me on his website if I overcame the craving and we both held up our end of the bargain. Just Catching Up

Not too much to talk about right now. Going strong with the weight loss. Next friday will most likely be my next post. I am trying a new recipe then and will share. I am still going to the gym everyday, but I am so tired. My CPAP mask broke on me so until I can get a new one, I will be out of energy. Trying not to let it get me down...moving on and taking naps when I need to, which means I AM sleeping a lot, but if I didnt, I would not make it to the gym. Hopefully we can get it soon!

Weigh In - Month 4

I lost 7 pounds and 3.3 inches this month! That got me to -51 pounds and -19 inches this year! Today also marked my 100th workout, and I completed my first fitness challenge! I also think I am retaining water, so the numbers are probably higher, but I only count what I see. And because I was late weighing myself last month, it has only been 3 weeks since I weighed myself, not a month! AND my PI (performance index) was 141 at the beginning of the month, and as of today, it is 179! For those of you who are unsure what that means, the higher the PI, the harder the workout gets. It was raised over 13 points just this week!
I am going to be taking a rest this weekend. Between the fitness challenge, zumba, and harder workouts, I have really hurt my back. I need to rest it without staying in bed, which would only make it worse. Curves is closed Monday so Tuesday is going to seem like an eternity away. I am sure I will go on slow walks, I just need to pull back a bit right now.
