Beef Steak and Veggies
This is a picture of it uncooked....wanted to post it while supper was cooking. This is always a fave of mine. Some kind of meat, your choice, marinade it in fat free Italian dressing, add your favorite veggies to the mix! Cover and cook at 400 for 30 minutes and add some brown rice, whole wheat pasta, or sweet potatoes to go with it. Always comes out yummy!

Smart Machines - Day 15
Lovin' the smart machines! Went to Curves today to do my morning workout and when I signed in, it said that my PI (performance index) had been raised! That means the machines computed that my workout had become too easy for me and made it a bit harder for me to hit my targets. Some people would not like that but I love it! The harder the workout the faster the results! And I am hitting all of my targets except for one, but everyone is having trouble with that machine. It has been recalculated, but still no one reaches their target. I come very close, Michelle said that the machine will eventually adjust to each of us and it will allow us to start hitting the target. Two weeks until weigh and measure!

1 lb. very lean ground turkey
1/2 c. part skim shredded cheese
1/4 c. teriyaki sauce (low sodium)
10 egg roll wrappers
Brown the ground turkey and drain juices. Mix in teriyaki sauce AFTER taking turkey off of heat. Mix in cheese, or add cheese as you fill...your choice. Lay egg roll wrapper diagonal, like i have in the above picture. Spoon 2 spoonfuls of filling in the middle. You can roll it how you want, I roll up, fold the sides over, then finish rolling. BAKE, not fry, at 350 for 10 minutes, turn, bake for another 5 to minutes depending on how dark you like them. *You want to make sure the filling is not too runny or it will leak during baking and you will spend an hour washing your cookie sheet! Serve with brown rice and enjoy!
Per serving (one egg roll): 182 calories, 20 carbs, 13 protein, 420 sodium (if you leave out the teriyaki sauce, the sodium is only 150 per roll, and still yummy...just not AS yummy!)
The other picture at the top is a new snack that I have found. It is Bacon ranch popcorn made by Popcorn Indiana. SUPER YUMMY! And why it is so awesome is the nutritional info. Per serving (2.5 cups) 150 calories, 270 sodium, 13 carbs, and 3 protein. AND.....ITS GLUTEN FREE!!!!! Think I found a new movie snack!

Lunch Time!!!
Today's lunch....6 slices of cucumber, 2 Tbs. ranch dip, 4 slices of turkey ham, and a can apple slushie...total calories: 217! 6 carbs and 21g protein, and very yummy! You can find how i make the slushie (very easy) for only 5 calories a few posts back.

Happy Mother's Day!?!?
Happy Mother's Day! Even though this day is solely made up by the card companies to make more money, we still use it to celebrate our mothers. We should show them all the time how much they truly mean to us. To the left is a picture of my mom, sister Katie, and me at my mom's wedding in 2003. I received a call from my mom today telling me that she should be celebrating ME because she is the one that was blessed the day I was born. I am so blessed to be given a loving, caring, praying, God fearing mother.
For me Mother's Day never brings anything good. I usually have to force myself to go to church that day. Year after year, I am the only married woman in the church without kids and year after year I have to sit there and be reminded of it. This year I have nursery and am so glad. Today was the mother/daughter prayer tea at our church. I did not go. I had planned on it, but the people I had invited to go with me could not. So once again, that would leave me sitting there all by myself. I didn't have a mother to take (David's mother and step mother wouldn't go with me) and I don't have a daughter to take. Last year I enjoyed myself and had a friend with me, but still everyone kinda just stayed with their families and guests. I was NOT about to be the odd ball sitting in the corner. I promised my mom that I would not let this get to me this year and I feel the only way to accomplish that at this time is to simply avoid it.
This is just some of the many reasons it is important for me to lose the weight. It is no secret that I want a baby. But this day just makes things worse. I go through all kinds of emotions and usually end up eating something i shouldn't. The harder I work, the faster I will get to my end point.
If you are a mother, count your blessings. Those times that you just need a "mommy moment" as people call it, or your kids are driving you crazy and you want them out of your hair, stop and think, what if I didn't have them at all? Who would you be without your kids? Where would you be without your kids? I know a person who is so blessed in her life with a wonderful family and all she can do is complain about them. Drives me CRAZY! God blesses you in ways you don't realize and all you can do is complain, how selfish.
Stepping away from the baby subject before i really get going...lol.... none of our mothers are perfect and you may not be blessed in the way that i am with my mom, but you can still be thankful for her. After all, if it wasn't for her, YOU WOULDN'T BE HERE!

Smart Machines - Day 1
I started using the smart machines at Curves today. It REALLY gives you a better workout. I use the same machines I did before, but I have a key card that goes into each machine. There is a green light that you concentrate on. If you go too slow it turns yellow, if you go too fast the green light blinks. It is a bit hard to keep the green light solid, but after a bit I will get use to the range of motion and do better at it.
After you are done with the workout, you go back over to the computer, and it tells you how you did. It will tell you the areas you did great, and the areas you need to improve on, and even tells you how many calories you burned! I am really excited about it. Even though today was the first day and I probably didn't get the best workout in, i already got a better workout than ever before. There is no one to distract me by talking or holding me up. I go at my own pace and I am loving it!

Turkey Bacon Wrapped Pork Chops!
Well this certainly was a oober yummy dish! Never made it before and I had the pork chops, but no italian dressing to put on them and did not want plain old chops. So I got creative! I seasoned the chops with salt and pepper, wrapped 3 pieces of turkey bacon around each chop, and then sprinkled, NO POURING!!!!, just sprinkled low sodium soy sauce on top. Cover and bake at 400 for 30 minutes. I served it with mashed potatoes made with fat free sour cream. It was after 9pm when I made this and forgot to make a veggie...I know, shame, shame! lol
Per serving: 174 calories, 1 carb, 28g protein, 742 sodium....if you cut back to 2 pieces bacon and no soy sauce the sodium will decrease to 389! Enjoy!!!!!

New Snack!!!! (Cran Apple Slushie)
The last snack that I mentioned was the ritz crackerfuls. I tried the four cheese and this week I tried the garden veggie. It was quite good! Tasted like a veggie dip to me. I also tried a great value strawberries and cream instant oatmeal...very yummy! 130 calories, 180 mg sodium, 27 carbs (wish it was a bit lower), 3g protein. AND the best one out of them all is a cran apple slushie! I use one pack of the great value cran apple drink mix ( the ones that you pour into a bottle of water) Pour it in the bottle of water and shake well. Stick in the freezer for an hour, shake, stick back in for another hour, shake, and enjoy! Very very yummy!!!!And only 5 calories!!!! 5 mg sodium, no carbs and no sugar! I know you will enjoy it!
